INGREDIENTS

  • 1 lb pizza dough, room temperature
  • ½ cup pizza sauce
  • 1 cup shredded low-moisture mozzarella
  • ½ cup shredded provolone
  • ½ cup shredded fontina or smoked mozzarella
  • ½ cup whole-milk ricotta
  • 12–16 slices spicy salami
  • ½ tsp crushed red pepper flakes
  • ¼ cup shaved parmesan cheese
  • Fresh basil leaves, for garnish
  • Hot honey, for drizzling
  • Olive oil, for brushing

INSTRUCTIONS

1. Preheat the Yoder
Set your Yoder smoker to 450°F with the pizza oven attachment installed. Allow the stone to fully preheat for proper wood-fired heat and even cooking.

2. Roll the Dough
On a lightly floured surface, roll the pizza dough into a large rectangle about ¼-inch thick.

3. Layer the Cheeses
Spread the pizza sauce evenly over the dough, leaving a small border around the edges. Sprinkle the mozzarella, provolone, and fontina evenly over the sauce. Dollop the ricotta across the dough for pockets of creamy richness.

4. Add the Salami
Layer the spicy salami evenly over the cheese. Sprinkle with crushed red pepper flakes for extra heat.

5. Roll and Slice
Starting from the long side, tightly roll the dough into a log. Using a sharp knife, slice into 1½-inch rolls.

6. Cook on the Yoder
